Olive Picking

We aim to harvest early in the picking season and although this means the oil yield is lower it results in enhanced varietal characteristics in the oil.  The outcome: a robust, herbaceous oil with “fresh mown hay” flavours and a distinctive “bite”.  All products are hand picked to minimise damage to furit which is processed just hours after harvest. This ensures maximum freshness and longevity.
